Sausage and Peppers

Ingredients:

-          1 package turkey sausage (either fresh from the meat dept. or pre-packaged works-up to your preference. Also, you can use spicy or mild sausage based on preference as well!)

-          1  package farfalle (I use whole wheat pasta)

-          3 peppers (I use 1 green, 1 red, and 1 orange or yellow to make it colorful)

-          2 cans diced tomatoes (14 oz)

-           1 can tomato sauce (8-12 oz)

-          1 tbsp. ground mustard

-          ¼ onion (chopped)

-          1 tbsp. garlic (chopped)

-          Couple dashes of basil and oregano

-          1 tsp. each of pepper and salt

Set-up:

-          Coat large frying pan with non-stick cooking spray

-          Cut turkey into bite-sized pieces

-          Cut peppers into bite-sized pieces

-          Chop onion and garlic

-          Fill medium pot with water for boiling pasta

Instructions:

-          Boil pasta per instructions on box, drain and set-aside

-          Add garlic and onion to frying pan and cook for approx. 3 minutes on medium heat

-          Add turkey sausage to pan.

-          Sprinkle ground mustard, salt, pepper, oregano and basil on top of sausage and cover. Cook for approx. 10 minutes, flipping sausage halfway through.

-          Add diced tomatoes and tomato sauce to pan, along with peppers. Cover pan again and simmer for 15 minutes.

Even my 14-month old will eat this!!!  Enjoy!
